Ramen Review #4: Nissin's Demae Ramen: Shoyu Tonkotsu Flavour

No more lectures on Wednesday! Which means I have no excuse to blog on Tuesday... Frog doesn't care and Frog will blog a ramen review every Tuesday anyway! Today's ramen: Nissin's Demae Ramen: Shoyu Tonkotsu flavour.




First thing: tonkotsu is a broth simmered from pork bones and shoyu is soy sauce. Inside there is the standard Nissin instant ramen, a soup packet and a sauce packet.


The soup base smells like dashi.


The ramen is the same as all the other Nissin ramen, not much to say about that. The broth does taste like there is some dashi in it. Dashi is Japanese fish broth and doesn't really taste overpowering fishy, but has a very distinct flavour that I can only describe as dashi. You can buy dashi in most Asian markets in a powdered form. The broth itself is light with a hint of sweetness, not as salty as the other flavours of this brand and I'm not sure how fresh tonkotsu is supposed to taste, but there is not much porkiness about the broth. 


The sauce included in the package tastes really salty, but it mixes well with the light broth. It also has a slight fermented taste to it, like there is a hint of bean sauce in it. Very complex flavour for an instant noodles sauce.

Overall: I like the flavours of the broth, its light if you don't add the sauce and nice and savory when you do add the sauce. If you don't like dashi, don't bother with this one, there is definitely a dashi flavour to it. I wouldn't keep this in my house as a basic flavour, but if you feel like a more Japanese hint in your ramen then it is a good choice. It would probably go well with a slice of nori (dried seaweed) a boiled or soft-boiled egg and some cha siu.
